요약 | Human milk is a complete and comprehensive diet that is crucial in nourishing newborn infants and affecting their long-term health. In addition to nutrients, human milk contains bioactive factors that are active and functional within infants. Therefore, a mother's milk is not only a nutritional supply, but also a personalized biofluid dynamically interacting with the infant. To better understand these interactions for targeted health management, it is necessary to consider the dynamics of human milk and the diversity of individual circumstances. This dissertation interrogates how infant conditions affect molecular changes of human milk during digestion. Chapter 1 reviews studies on protein digestion of baby foods, identifying key factors that affect proteolysis during infant digestion and discussing various research approaches.
